Over the centuries, Kolomna has been famous throughout Russia for its simple but delicious delicacy – apple pastila (a kind of marshmallow). In the eighteenth century, pastila was a “sweet emblem” of the city and by the nineteenth it was already one of the most famous Russian sweets.

During the revolutions and wars of the last century, the recipe for the Kolomna pastila was lost and the local confectionery factories were closed. The taste of the Kolomna pastila gradually disappeared and along with it a taste and aroma of Russian history.
